S-100 protein has a molecular weight of 21K Dalton and consists of two subunits, an alpha
chain (α) chain and a beta (β) chain. It is known that combinations of these subunits differ
throughout the human body. S-100ββ is present in glial cells and schwann cells, S-100αβ in
glial cells, and S-100αα in striated muscle, heart, and kidney.
Studies suggests that the concentration of S-100β in cerebrospinal fluid may be a useful
marker for researching the degree of brain damage after head injury, cerebral hemorrhage,
and ischemic stroke. Recently another study described that increased levels of S-100β in
blood correlated to the degree of brain damage after cerebral ischemia, infarction, hemorrhage
and severe head injury.

Cases of food and environmental allergies have been increasing over the last decade. While conservative estimates suggest IgE-mediated allergy affects 6-8% of children and 2-3% of adults, some estimates are as high as 30%.3, 2 Symptoms can range from mild to severe and include itching, hives,...
Food sensitivity or food intolerance involves a non-allergic response to a food or food additive. In a recent on-line survey conducted in the U.S., 24% of adults aged 18 to 79 reported a food intolerance. While a food allergy is typically mediated by IgE antibodies, adverse reactions to food...
